Gingerbread Chocolate Chip Cookies



Cookies:

  • 200 grams flour

  • 90 grams dark brown sugar

  • 1 teaspoon ground ginger

  • 1 1/2 teaspoons ground cinnamon

  • 1/4 teaspoons ground cloves

  • 1/4 teaspoon ground nutmeg

  • 2 tablespoons cocoa powder

  • 125 grams butter (room temp)

  • 1/2 cup and 2 tablespoons molasses

  • 1 teaspoon baking soda

  • 2 teaspoons boiling water

  • 1 teaspoon cornstarch

  • 150 grams dark chocolate chips

  • 50 grams milk chocolate cut into chunks

  • Granulated sugar to roll the cookies in


Instructions -

  1. Whisk together flour, ginger, cinnamon, cloves, nutmeg, cornstarch, and cocoa powder. Set aside.

  2. Using an electric mixer, cream the butter and the sugar until light, creamy and fluffy.

  3. Add the molasses and mix until combined.

  4. Mix together the baking soda and the boiling water.

  5. Fold in half of the dry ingredients into the butter and molasses mixture.

  6. Mix in the baking soda mixture.

  7. Fold in the rest of the dry ingredients.

  8. Fold in the chocolate.

  9. Roll into balls, 60 grams each.

  10. Roll them all in sugar.

  11. Chill in fridge for 4 hours.

  12. Preheat oven to 165 c (325 f)

  13. Bake for 11-14 min.
